Why would this job shrink if AI can't teach art well?

What can't be replaced in a studio class?
A live demonstration with a brush in hand, and a critique given in person while looking at an actual piece of a student's work, aren't things a general tool reproduces well. Guiding a student's application portfolio for art school also depends on judgment about that specific person's work and goals, which keeps a real instructor central even as class sizes shift with demand.
If you teach or want to teach art, what should you build?
Since the risk here is fewer students rather than being replaced, build a teaching specialty that connects clearly to where demand is holding up, not just general studio instruction. A background in art education or studio art with real portfolio-coaching experience gives you something a general AI critique tool can't offer: a track record of getting specific students into specific programs.
